Beef in Oyster Sauce

Ingredients:

1 pound flank steak, thinly sliced into 1-inch strips 3 tablespoons water
1 tablespoon soy sauce 1 tablespoon cornstarch
1 teaspoon sugar 1/2 teaspoon baking soda
1 tablespoon mirin (sweet rice wine) 2 tablespoons vegetable oil
1/2 pound Chinese broccoli or any other Asian green vegetable

Seasoning Sauce
1 teaspoon sugar 1/2 teaspoon cornstarch
2 tablespoons oyster sauce 1 tablespoon water
1/2 teaspoon sesame oil 16 slices of fresh ginger root, peeled and sliced into quarter-sized disks
1/2 bunch green onions, trimmed and cut on the diagonal, (cut into 1-inch pieces)

How to Prepare:

In a nonreactive container or bowl, marinate the sliced beef with the soy sauce, water, cornstarch, sugar and baking soda. Add the vegetable oil and mix thoroughly. Cover with plastic wrap and marinate meat in refrigerator for 1 hour (or longer). In a large saucepan of boiling water, cook the broccoli for about 2 minutes or until crisp-tender. Drain well and stir-fry in a skillet or wok; season with wine, salt and sugar. In a large skillet or wok, heat enough oil to fry the meat. Cook just until the meat changes color; remove meat with a slotted spoon or wire skimmer. In a small bowl mix together the seasoning sauce and set aside. Drain off oil from skillet or wok (or use a clean pan) leaving 2 tablespoons of vegetable oil; heat to hot. Fry green onions and ginger; add beef and stir-fry quickly over hot heat. Add the seasoning sauce; stir until thickened and heated through. Place beef mixture over seasoned green vegetables and serve with rice.
