Ingredients:
1 head garlic, minced 1 cup Vinegar
1 tbsp. salt 1/2 tsp. pepper powder
1 kg. goats meat, cut into large cubes 1 cup fat
1 8-g. can tomator sauce 6 red and green pepper , quartered
1 cup sweet peas 2 tsps. salt
1/2 olives 1/2 tsp. black pepper
Tabasco sauce to taste (optional)
Liver Gravy
1/4 kg liver, broiled and ground 2 tbsps bread crumbs
2 tbsps. vinegar 1 cup stock
1 tsp salt 1/4 tsp. black pepper
How to Prepare:
Combine the first four ingredients together. Blend well. Marinate the meat in the mixture at least overnight.
Prepare the gravy. In a saucepan, mix the liver and the rest of the ingredients. Bring to a boil. Add the bread crumbs and cooked it until it thickens; set aside.
Heat the the pan in a heavy saucepan. Fry the goat's meat until light brown. Set aside. Saute garlic, onions and tomatoes. Add the meat. Cover with enough water stock and simmer until meat is tender. Add the potatoes and sweet pepper and cook a few minutes more. Then add the olives, sweet peas, and gravy. Season to taste. Cook until done. Serve hot.
Good for 12 persons.
