Leche Flan

Ingredients:

8 egg yolks 1 can condensed milk (14 oz)
1/2 cup evaporated milk 1/4 tsp grated lemon rind
1/2 tsp vanilla 1/2 cup sugar

How to Prepare:

Melt 1/2 cup sugar in an 8 inch round baking pan over low heat. Allow to caramelized sugar evenly on the bottom and sides of the pan.

In a bowl, stir egg yolks until well-blended but not frothy. Pour evaporated and condensed milk in the egg yolk while stirring. Add lime or lemon rind or vanilla. Mix well. Pour the mixture in the pan. Place the pan in shallow steamer. Steam for 2 hours. let it chill and serve cold.

Good for 8 to 10 persons.
