Lemon Pork
Ingredients
* 2 Cloves Garlic -- finely chopped
* 1 Tablespoon Olive Oil
* 1 Large Onion -- finely chopped
* 6 Medium Tomatoes -- finely chopped
* 2 Lemons Lemon Juice
* 2 Pounds Pork -- cubed
* 6 Cups Water
* 3 Medium Yams -- peeled and quartered
* 1 Pound Spinach
* 3 Medium Italian Peppers -- chopped
* 1 Tablespoon Salt
Directions
Saute garlic in oil until brown. Add onion, tomatoes, and lemon juice. Add pork and cook until brown. Add water. Bring to a boil and simmer until pork is tender. Add yams and simmer until fork-tender. Add spinach, peppers and salt. Cook for another 7 minutes and serve.
Serves 4
