Noodles In Broth (Pancit Mami)

Ingredients

* 1/4 Pound Pork -- cubed
* 1/4 Pound Chicken -- cubed
* 3 Cups Water
* 1 Teaspoon Salt
* 2 Tablespoons Olive Oil
* 1 Tablespoon Garlic -- finely chopped
* 1 Small Onion -- finely chopped
* Salt And Pepper -- to taste
* 1 Pound Rice Noodles
* 2 Tablespoons Scallions -- finely chopped

Directions
In medium pot, boil pork and chicken in 3 cups water until tender. Season with salt. Remove from water and cool. Shred both pork and chicken. Reserve 2 cups of cooking liquid. In large skillet heat oil and saute garlic and onion until light brown. Add pork and chicken. Add reserved water. Simmer for 2 minutes. Season with salt and pepper. Put noodles in serving bowls and pour chicken-pork mixture over. (Note-Broth will cook the noodles.) Garnish with scallions and serve.
