Puto (rice muffins)
Ingredients:
2 cups rice flour 3 tsp. baking powder
1/2 tsp. salt 2 cup coconut milk
1 cup grated coconut 1 tsp. anise (optional)
Preparation:
Sift the flour. In mixing bowl add coconut milk to flour and all other ingredients until smooth. In lightly greased muffin pans, fill 2/3 full. Cook in steamer for 30 minutes. Check with tooth pick. Make sure the tooth pick remains clean even you remove it. Eat!
